I’m almost 35 years old and while I do eat a LOT more vegetables than I used to as a kid, I still really don’t like vegetables. Most of the vegetables that I do eat now, that I didn’t then, I merely tolerate. I don’t like them but I can eat them because they’re healthy. So I really don’t eat nearly enough veggies overall. So, I was so pleased to be able to read this cookbook. I started off skeptical, but so far, I can say that I actually love vegetables now. Well, some of them at least…LOL

A Lesson in Veggies
This book offers SO much more than just recipes to make veggies palatable. It also includes frequently asked questions regarding what veggies to pick and how to prepare them. There are little info pages describing what certain vegetables are as well. Some I had never even heard of, so this was incredibly useful. I would be reading along and find a recipe with Radicchio. And I’d think “what the heck is Radicchio?” and sure enough, the next page tells me what it is, where it comes from, and how it is usually prepared.
The information on the different ways to best prep certain veggies and what veggies are best were things I always wondered about and now I have answers. For someone that doesn’t cook a lot of veggies, that info is invaluable. I learned that canned or frozen veggies are often just as good as fresh vegetables. This was a relief to know since a huge portion of what I eat is canned food from the food pantry. It’s not often you find info on being able to cook with canned food.
SO many options
Gluten-free? There is an easy adaptation for that. Vegetarian? No problem. Almost every recipe in this book gives alternative options to meet certain dietary needs. So it really is perfect for anyone. And there is a huge variety of recipes to choose from. From appetizers to dips to sandwiches and whole veggies filled entrees, it is full of delicious ideas. I LOVE the Onion Ring Caprese Stack. This really made me love vegetables. Caprese recipes are a weakness of mine as I love the tomato, mozzarella, basil combo. I had never thought of adding in onion rings! It was amazing. The freshness of the Caprese ingredients pairs perfectly with my crispy air-fried onion rings.
Kids Love Vegetables
Say it ain’t so! Are kids willingly eating vegetables? Mine are. Okay, so there is a recipe or two that “hides” the vegetables in the dish and they taste so good you wouldn’t even know they were there. Like the broccoli filled Frittata. The kids love these things. And I have a ton of eggs and frozen broccoli, so this is a huge win. This book isn’t afraid of adding cheeses, frying, and adding lots of good flavors to make veggies fun and delicious. It’s very easy to love vegetables when they really taste good.
Great for Everyone
I am loving this cookbook so far. While my palate has expanded since I was a picky eater as a child, I still don’t eat vegetables as much as I should. I still don’t like many of them. This book has helped immensely for me and my kids. I can’t wait to try more. Me. A veggie…disliker…excited to cook, eat, and love veggies. True story.
